What is kombucha?

[kombucha or kambocha] , is a fermented, usually tea-based, drink enriched with probiotic cultures. These are supplied using SCOBY - symbiotic cultures of bacteria and yeast, which start the entire fermentation. Kombucha is a healthy, and most importantly very tasty, alternative to classic lemonades, sodas and other sweetened drinks.
In addition to the classic, pure kombucha, they also make flavored versions with basically any fruit, vegetable, or herb imaginable. JZT Ferments has a permanent offering of five kombuchas - *OG (pure kombucha), *Passion Fruit, *Bergamot, *Strawberry/Bergamot, and *Blueberry. At the same time, JZT regularly comes out with limited seasonal editions that are more about novel flavor combinations.

Kombucha is beneficial for the digestive tract thanks to the probiotics it naturally contains, and it also contains vitamins, especially group B. Thanks to green tea, it is rich in antioxidants. Fruit kombuchas ( *Passion fruit , *Bergamot , *Strawberry/Bergamot and *Blueberry ) contain a number of other health-beneficial substances such as Vitamins C, E, or folic acid contained in the given fruit.
Tips, tricks and recipes

Kombucha should be stored in the refrigerator at 5°C and ideally consumed within 6 weeks of bottling (8 weeks for *Borůvka ). However, even after this time, kombucha is not harmful, it is just significantly more acidic and may contain visible clusters of yeast. At the same time, it is advisable to store kombucha in an upright position, as kombucha is still fermenting and the aluminum lid can easily loosen.
Avoid improper storage, especially for fruit-flavored kombucha.
When kombucha is fermented, a small amount of alcohol is produced as a by-product. At JZT, we strictly monitor the alcohol level in the bottle to ensure that it does not exceed 0.5%. This makes it a non-alcoholic beverage.
However, improper storage of kombucha can lead to the formation of alcohol.
We recommend stirring lightly before opening.
Kombucha is best served chilled at home, served on ice.
Kombucha is great for breakfast, as a refreshment during snacks, an afternoon cool-down, or an evening relaxation!
JZT Kombuchas are also an ideal companion for picnics in nature, evenings on the waterfront, or perhaps a lunch with friends.
JZT kombuchas are great on their own, but the combination of *OG with quality gin is worth it, whether for a Saturday brunch or a festive dinner with friends!
